Name That Town
Alexandria, on the Egyptian coast was founded by Alexander the Great in 332 BC. Home of the greatest library in the world, Alexandria was considered second only to Rome by the Roman Emperors. During his campaign of conquest, Alexander named many cities after himself in such diverse countries as Turkey, Persia (Iran), India, Afghanistan, Pakistan etc. In the USA, six states have cities named for him, including our own Alexander City, Alabama.
Food Thoughts
"Bake the Parrot fish at Chalcedon by the sea after rinsing it well. Prepare it whole as follows: cover completely with cheese and olive oil and hang it in a hot oven. Then bake well. Sprinkle with salt mixed with cumin and oil pouring down from your hand the God-given stream."
Archestratus, 680 BC
In the life of Luxury, quoted by Athenaeus.
Greek Diet May Help You live Longer
The Virtues of Olives and Olive Oil
Traditional Greek-style diet replete with olive oil and moderate amounts of wine not only helps prevent heart disease and cancer, it also helps you live longer, a new study shows. World Health Organization (WHO) statistics show that People in European Mediterranean countries live longer than those in other parts of the world, despite the fact that smoke, according to Harvard School of Public Health. The British Medical Journal, in analyzing the eating habits from rural villages, broke down the "Greek Diet" into eight components: Olive Oil, Moderate Wine, Cereals, Vegetables and fruit, Garlic, Low Meat intake, Breads, Pasta & beans. Olive Oil is high in monounsaturated fat, which has been shown to lower cholesterol and reduce the risk of hardening of the arteries.
Recipe of the month!
Grilled Fish
The grilled fish that we prepare at Nabeel's Cafe & Market is genuinely Greek! There is little that is done to the fish, except brushing it with Extra Virgin Olive Oil and giving it a general sprinkling of oregano. On the table is a bowl of Extra Virgin Olive Oil, lemon juice, and oregano with a little salt and pepper that has been mixed & stirred real well.

Ingredients
3-4 whole fish (snapper, bass, sword fish, grouper fillets, cleaned gutted and scalled.
Lemon wedges

Marinade
1 cup Extra Virgin Oilive Oil
4 table spoons of oregano
3 lemons, cut in half

Preparation
Make 4 shallow diagonal slashes on each side of the fish (depending on size of filets). Mix the oil with oregano and lemon in a bowl and brush the fish, inside and out, with the marinade. Prepare the grill. Place the fish in a fish grill holder. Grill the fish for about 15 minutes by brushing the marinade every time you turn over (must turn over about 5 times in 15 minutes). If the tail is kind of burned-up do not be alarmed. Remove the fish from the grill and place in a platter and keep warm. Pour about 3/4 of the marinade over the fish on both sides. Serve with Greek peasant salad, Feta cheese and crusty bread. SERVES 3-4
