The Olympic opening night ceremony was a great success! Here are some memories.
Greek Olympic Days in Homewood, Alabama!
The Mayor of Homewood, the Honorable Barry R. McCulley issued a proclamation to recognize the Olympic Games in Greece. He wrote:
WHEREAS, the Greek American Community has forged a permanent place in the melting pot that is, the United States of America; and WHEREAS, the Greek Community's warmth, passion and industriousness has made them the envy of many other cultural groups in our country; and WHEREAS, their positive contributions to our country and our city, in so many ways are deeply appreciated by all who have come to know their Community; and WHEREAS, with the Olympic Games returning to Athens Greece, it is fitting and proper that we celebrate the competitive spirit that was born in Greece in 776 B.C. And it is the desire of the City of Homewood to formally recognize and pay tribute to a country and its people that have meant so much in many different ways in the formation of our world, as we know it today, NOW THEREFORE, I, Barry R. McCulley, Mayor of the City of Homewood, Alabama, do hereby proclaim August 13th through August 29th for the Summer Games, and September 17th through September 29th, 2004 for the Paralympic Games as: "Greek Olympic Days" in Homewood, Alabama. In Witness Thereof, I have set my Hand and caused the Great Seal of the SEAL City of Homewood to be affixed this the 5th of August, 2004.

Lentil: Greeks knew of lentils since the 3rd Century B.C.E. The following is a quote from the Stoic Philosophers of that era, "A wise man does all things right, including the seasoning of the lentil soup"

| Recipe of the month - Two this time! | ||||||||||||||||||

Lentil Soup
Ingredients:
Preparation: Soak the lentils overnight in cold water. Rinse and place in a large pot with plenty of water. Bring water to a boil. Drain off this water and replace with the 12-15 cups of hot water. Add the remaining ingredients except the tomatoes and the red wine vinegar. Add salt and pepper to taste. Simmer for about 45 minutes, and then add the tomatoes and cook for about 20 minutes longer. Before you remove from the stove stir in red wine vinegar, and 3 tablespoons of TSITALIA, stir a few times and serve hot immediately. NOTE: If the soup is to thick add more water before adding the tomatoes. The lentil soup is brought to an incredible flavor with the red wine Vinegar of Greece, NOT sugary balsamic.
Greek Fried Eggs
You don't know what you are missing if you do not try this Greek fried egg recipe. The eggs fry in about a minute; the extra virgin oil bubbling up, the edge of the whites turning as brown and crispy as the pages of an old book. And just before taking them off the heat spoon some of the hot oil all over the eggs. When you serve them slip the eggs in a dip plate including all of the oil. Do not say "…oh I am not going to eat eggs swimming in olive oil" And ah that oil, it has so many benefits and so many medicinal powers, including glowing skin and shiny hair. I drink a soup spoon of extra virgin olive oil every morning!!
Ingredients:
Preparation:
Pour the oil into a frying pan and heat until hot.
Add the eggs and fry them fast and furiously and until the egg whites are
crisp and the yolks yellow and firm, 1-3 minutes. Using a soup spoon,
spoon several splashes of the hot oil over the eggs.
Remove the eggs from the heat and slide into a dip plate with the oil.
Season with salt and pepper. Serve hot with slices crusty bread to sop up
the runny yolks and the delicious oil, and some slices of authentic
Greek FETA*.
