We're pleased to provide this monthly Newsletter so that so many of our valued customers can be informed of the latest trends and tastes of Mediterranean diet. Here you'll also find interesting facts about Greece, history, recipes, health issues, and learn more about the Mediterranean Diet, etc.

Want to impress your Greek friends?
Here are some common Greek words and phrases that you will find very helpful when you visit Greece.

Greek is a language with long history. The language itself has developed over the centuries into the Modern Greek of today, spoken by approximately 11 million people. Greek is a phonetic language, which means that the sound of each letter does not change with its position. Although the characters may appear a little confusing at first, don't be put off by this. With a little practice most people can read Greek in just a few hours.

The Book of the Month
We started in February featuring books of various interests. We featured Ernie Pyle: "A Hoosier Childhood" by Bob Bales. We will continue to feature different books with various topics, cookbooks, historic books, that will be of great interest to all of us, etc.

This month, we will feature: Stairway To Heaven: "A story of courage and the American dream…." A Memoir By Plato Papajohn, of Birmingham Alabama. Plato, a good friend of mine and my family that I have known for almost 32 years has done an outstanding job with this book. I couldn't put the book down. Bravo Platona!! ( as we call him in Greek)

"Stairway To Heaven is a true story of a Greek emigrant (Plato) who overcome odds through good work and belief in God. He survived the Nazi invasion in Greece, the starvation and misery brought on by the (Greek) civil war and the betrayal of friends and family brought on by the coercion of evil communism."

Figs
Fresh figs are sweet and fat free. For a quick summer dessert, try them sliced and drizzled with honey and possibly a little heavy cream.

Remember: Buy fruit that is heavy, smells fresh and soft to the touch. Use figs promptly, they keep refrigerated for only a day or two.

There are different types/varieties.

  • Adriatic named for the Adriatic Sea, the figs have pale pink flesh and light green skin
  • Black Mission (or Mission) named for the Spanish missionaries who planted fig trees along the California coast Its color is deep purple and tender pink skin.
  • Calimyrna, the Smyrna fig comes from the ancient city of Smyrna (Asia Minor) It used to go by that name , but the Calimyrna is its descendant, grown in California. It is large and green in color.

    Pasta (Dried vs. Fresh)

  • Dried pasta is made with semolina, flour milled from durum wheat, which gives it strength the mechanical pasta-making process and hold its shape when cooked. It has a slightly rough surface to which a sauce can cling. Store in a cool dry place, dried pasta will stay fresh for up to 2 years.
  • Fresh pasta, which you will find in a refrigerated case at the grocery store, is usually made with white flour and eggs. The term "fresh" does not imply superior quality; it simply means that the dough was made recently and must be kept refrigerated. It has soft, porous texture and is best paired with light sauces containing cream, butter, and cheese. When wrapped airtight, it will keep for a week refrigerated and up to a month in the freezer.
    NOTE:Did you know that a pound of fresh pasta makes fewer servings than a pound of dried pasta because the fresh pasta absorbs less water during cooking? On package labels, a serving size for dried pasta is 2 ounces, while a serving size for fresh pasta is 3 ounces; both yield 1 cup cooked

    Ribs
    What rib doesn't taste good brushed with BBQ sauce and grilled? Here is a guide to the basics:

  • Beef: Back ribs are the largest bones left when a standing rib roast is cut to make boneless rib-eye roast. Short ribs cut from the shoulder, are rectangular. They contain a cross section of rib bone with alternating layers of lean meat and fat. Flanken-style ribs are similar to short ribs, except are cut lengthwise rather than between the ribs.
  • Lamb: Riblets are cut from the breast and contain long and narrow ribs with meat and fat layers.

  • Licorice
    Did you know that the ancient Greeks used licorice root for asthma symptoms? Modern day herbalists are still recommending it. For relief from mild asthma, drink one or two cups daily. But remember the old saying about too much of a good thing. Large doses of licorice can cause high blood pressure in some people.

  • Green Tea
    Green tea contains powerful antioxidants that scientists credit for its ability to chase away cancer. One study in Japan found that green tea reduced all types of cancer, particularly among women who drank 10 or more cups a day. Another study found that women with breast cancer who drank more than five cups of green tea a day were less likely to have a recurrence of the disease. So, if you hoping to prevent breast cancer, help yourself to a soothing cup of green tea.

  • Garlic
    I mention it in almost every Newsletter. Give the cold shoulder to congestion, sore throat, and bland food with a clove of garlic. Not only will it zest up your meal, it will boost your immune system-thanks to allicin. Allicin works to fight colds, the flu, and other infections by breaking down into smaller chemicals called sulfur compounds. You name it Allicin in garlic seems to kill it - bacteria, molds, viruses, yeasts, and other parasites. Some of its victims include Salmonella and E. coli.

    Chicken Soup
    Chicken soup as a cold remedy goes back long before your grand-mother or even great-grandmother. In 60 A.D., an army surgeon to Roman emperor Nero wrote of it in his journals. A thousand years later another physician stated "Chicken soup….is recommended as an excellent food as well as medication. TRY OUR AVGOLEMONO soup… it has all of those ingredients to fight cold.

    Tomato Juice
    In a clinical study, drinking about 17 ounces a day for a month kept cholesterol from oxidizing and attaching to the your artery walls a process that hardens and blocks your arteries. Why? Because tomato juice contains nearly triple levels of lycopene, a carotinoid proven to guard against heart attacks.

    Cinnamon
    Just one-fourth to one teaspoon of cinnamon every day could be enough to help control your blood sugar and avoid diabetes. Add cinnamon to your breakfast cereals beverages and desserts.

    Yogurt
    Sometimes you get diarrhea from bad bacteria in your stomach. To protect yourself eat plenty of plain yogurt with active culture. Those cultures are friendly bacteria that kill off the ones making you sick. Try our freshly made homemade thick yogurt (sakoulas, it means drained in a cheese cloth, in Greek)

    Coconut
    Are cream of coconut and coconut cream the same thing? No. Coconut cream, available in Asian and Hispanic specialty stores, is pressed and re-hydrated coconut meat. It resembles vegetable shortening and is used in some Asian and Caribbean cooking for deep frying. Cream of coconut, a sweeter, thicker version of coconut milk, contains added sugar and stabilizers. It is used in pina coladas. Available where cocktail mixers are sold.

    Recipe of the month!
    Broccoli Pesto Spaghetti
    Serves 4

    The pesto is best made in a food processor, a blender makes the mixture too creamy.

    Ingredients:

    • 1 package (16 ounces) spaghetti
    • Salt
    • 1 bag (16 ounces) frozen chopped broccoli
    • 1 cup chicken broth
    • ½ cup grated Parmesan cheese (*)
    • 3 tablespoons extra virgin olive oil (TSITALIA)*
    • Coarsely ground black pepper

    Preparation
    In a sauce pot, prepare pasta in boiling salted water. In saucepan, prepare broccoli as label directs. In a food processor with knife blade attached, blend cooked broccoli, chicken broth, Parmesan cheese, olive oil, garlic, and salt to taste, until smooth, stopping processor occasionally to scrape down side. Drain pasta; toss broccoli with pesto and the rest of ingredients. Sprinkle with ground black pepper to serve.
